Classic Summer Panzanella
4 cups cubed sourdough bread... place in bowl, allow to sit, uncovered, while prepping veggies. Once veggies are prepped, add 1/4 cup olive oil, mix thoroughly.
Salad: 5 cups halved cherry tomatoes (or other)
3 tablespoons red wine vinegar
1/4 cup olive oil
1 small shallot or red onion (diced)
1 clove garlic (minced)
1 sweet pepper (chopped)
1 cup chopped basil
grated or shaved Parmesan (try the Alpine!) to taste
salt and pepper to taste
Combine bread and salad, allow to sit one hour, enjoy!
Croute Au Fromage
6-8 slices sourdough bread (enough to cover bottom of baking pan)
1/2 cup white wine
4 tablespoons butter
2 medium tomatoes, chopped
2 medium onions, chopped
1 clove garlic (minced)
basil, oregano, rosemary to taste
1 tablespoon olive oil
1/4 cup rehydrated sun dried tomatoes, chopped
8 oz cream cheese
1/2 lb grated Swiss cheese
6 slices cooked, diced bacon
Place bread in 9"x13" baking dish. Drizzle on wine, stew veggies and bacon over bread, sprinkle with herbs, and drizzle with olive oil. In a small sauce pan, melt butter, add cheese, and melt, add salt and pepper to taste, and spoon over bread and veggies in baking pan. Be sure to leave some bread exposed. Broil until cheese is bubbly and bread edges are brown. Cut and serve immediately.
Our chickens this week are from Lost Peacock Farm out of Rosebud. Enjoy them stuffed and roasted for a delicious dinner!
