I whole smoked chicken, boned and diced
1/4 c currants or raisins
1/4 c chopped pecans
1 chopped green onion or chopped onion to taste
1/4 c chopped fresh apple, or 1/8 c dried apple
celery salt and pepper to taste
Mayo to desired consistency (I make home made mayo and sweeten it with honey... delish!)
We have carrots in the shares again this week. This may be our last week on carrots, so please enjoy them while they are in season! We have been making a creamed carrot soup that is easy and delicious.
Saute 1 chopped onion in 1 T oil or butter
Add 4 c chicken stock (stock made from the bones of the smoked chicken is amazing!)
1 1/2 lbs chopped carrots
1/2 t salt
Boil the carrots in the stock until tender, puree in blender, enjoy!
We sometimes top with garlic scape pesto made with our CSA pecans... quite nice:)
