We've been having lots of Okra in our shares lately and let's be honest it's not something most of us go buying the the grocery store BUT it is very good for the body and has lots of benefits health wise consuming especially when it's grown local dn as fresh as it comes in the CSA. . I have a few TOP favorite ways to eat Okra... I love fermented or pickled Okra. Check back a few weeks ago for the fermenting post and give it a shot! Also Okra pairs delightfully with tomato bases and tomato tends to cut down on the sliminess. One way is to saute them with tomatoes. Many people love to deep fry them as well. With so many great options for cooking up these beautiful vegetables you can get creative or keep it simple.

I use to struggle with what to cook and when I first transitioned from eating out, fast food or boxed stuff to wholesomely grown fruits and vegetables I honestly was a bit overwhelmed with what to do with the food nature intended for us to nourish ourselves with. Over the years I have learned a really powerful piece... keep it simple! Yes, it is fun to create elaborate recipes but also some of the dishes I enjoy the most are often very simple, over the years I have also learned incorporating herbs/spices into the blend makes a world of a difference and not to mention the additional health benefits. Keeping it Simple.So how to keep it simple? A little water and butter (or coconut oil) drizzled in the bottom of the skillet, toss in some vegetables and simmer away, checking for doneness with a fork throughout the cooking time. Healthy meals can be quick and easy clean up too, often with one pan to rinse out after. Pair with some wild rice or quinoa if you have a few extra minutes. Mini Share

Fermentation is easy to do and big BONUS there is NO HEAT REQUIRED no sweating in the kitchen firing up big canners. It's also a fun project you can get the whole family involved in and fermented foods are SUPER good for your health too!! What do I ferment and how?There are the basics you can ferment that we are all more familiar with such as cabbage to sauerkraut, but did you know you can ferment cucumbers, green beans, peppers, eggplant and more!? Yes you really can and I personally enjoy fermented pickles over caned ones they develop such a lovely flavor through the process.
Have fun, explore and experiment!! There are a number of fermenting contraptions out there to buy, I have been using a mason jar method the last few years and it is just so simple. I don't do huge batches so it's perfect for me! Check out these suggestions or ideas on making your own, plus this site gets into all the nitty gritty details of fermentation if you're wanting all the details in between. The Salt Brine you will create is a ratio of 1 TBSP salt to 1 Cup water. I like to use Pink Himalayan Salt, but any unprocessed sea salt will do the trick, NO table salt or any with anti-caking chemicals. Get all the details on various salts here. Cover vegetables with Salt Brine, add fermenting weight on top (to keep mixture submerged in brine), add your top (see suggestions), let sit on counter and then wait and taste and wait until the mixture is at your desired taste! Once it is tasty for your preference, move to cold storage to stop the fermentation process. Need some inspiration for combinations to ferment. Check out some of these wonderful ideas!
