Breakfast, lunch or dinner get your "Frittata" on... 

Ah what's a.... Frittata?! Well for one it's an amazingly delicious was to use those farm fresh eggs and more!! I will show you a basic recipe then get your creative kitchen juices running and then go have some fun in the kitchen.

Farm Fresh Frittata Recipe

This recipe is for a super basic, single person portion, double it for additional servings.  Remember there are TONS of ways to prepare these Frittata's and at the end of this post is a link to MANY more variations to explore. 

Prepare your Ingredients :
  • 1/3 cup Milk (or milk substitute) 
  • 3 Eggs
  • 1 Cup Chopped Kale/Spinach/or other Cooking Greens 
  • 3 Cherry Tomatoes Sliced {B and H Produce Farm}
  • Salt + Pepper
  • 3 TBSP Oil (I personally love unrefined organic Coconut Oil)
  • Avocado (optional) 
  • LOVE!!!

Now that we have all the ingredients on hand... it's time to get cooking. 
  1. Medium-Low Heat Oil in Skillet (I use a 10-12" stainless steel skillet) 
  2. Turn the TOP Broiler on in the Oven 
  3. Whisk Eggs + Milk together (whisking helps make them light and fluffy) 
  4. Add Salt + Pepper to Egg Mix 
  5. Pour Egg Mix into Skillet (Medium-Low Heat) 
  6. Wait a few moments and then sprinkle over the egg mixture chopped greens and sliced cherry tomatoes. 
  7. Cook until eggs begin to get bubbly and surface begins to firm up... then place the entire skillet in the oven on the highest rack under the TOP broiler until Golden Brown and begins to crisp. Stay close and watch to ensure it does not burn!!! 
  8. Remove from Oven, gently break the edges of the Frittata away from the skillet and slide onto a plate. For larger portions cut like a Pie and serve up slices. Top with avocado slices and serve!
  9. P.s. And if all else fails and the "frittata" didn't come out as "picture" scramble the skillet up with a fork and there you have some very yummy scrambled eggs. 😉
