One of my favorite things about summer is harvesting chanterelles! Our property seems prime for this delicious mushroom, and the past week has seen nice picking for several days. All but the mini shares will be receiving some of these summer delights this week! Saute them in butter and eat them alone, or with almost any dish... especially good with beef! They will come to you fresh from the forest... I cannot wash them or they will not stay firm. Keep them in their clam shell, and only wash right before using.
