Taking a step back this week to remind you... meals do not have to be complicated! I use to struggle with what to cook and when I first transitioned from eating out, fast food or boxed stuff to wholesomely grown fruits and vegetables I honestly was a bit overwhelmed with what to do with the food nature intended for us to nourish ourselves with. Over the years I have learned a really powerful piece... keep it simple! Yes, it is fun to create elaborate recipes but also some of the dishes I enjoy the most are often very simple, over the years I have also learned incorporating herbs/spices into the blend makes a world of a difference and not to mention the additional health benefits. So how to keep it simple? A little water and butter (or coconut oil) drizzled in the bottom of the skillet, toss in some vegetables and simmer away, checking for doneness with a fork throughout the cooking time. Healthy meals can be quick and easy clean up too, often with one pan to rinse out after. Pair with some wild rice or quinoa if you have a few extra minutes.
